The Pie Maker is a small batch bakery, locally owned and operated since 2012 in Montezuma County, Colorado. We specialize in sweet & savory pastries, desserts, and artisan bagels. All of our baked goods are handmade from scratch using high quality ingredients that regularly feature local, seasonal, and organic foods. We hand-shape our dough and use only organic butter in all of our pastry treats. The bread flour we bake with is organic and unbleached, and our all purpose unbleached flour is purchased right here in Montezuma County from Cortez Milling.
We're proud to own a business that actively participates in local, sustainable, and renewable practices! We reduce our waste through recycling and we send all of our food scraps to be used as compost in local school gardens. We use eco-friendly packaging in all of our to-go wares, and we only buy sustainable meat products for our menu.
Pastry chef and owner, Shoshana Winer has honed her baking skills in award winning bakeries throughout Colorado and Oregon. Shani earned her Baking and Pastry diploma with honors at the Oregon Culinary Institute in Portland, Oregon. Shani is delighted to bring her love of baking and kitchen science to Montezuma County where she has resided since 2006.
Co-founder and marketing director, Tim Stubbs has been a resident and cultural and natural resources educator in Montezuma County since 2004. Tim is our wonderful photographer, coffee guru, and official taste tester. He can also be found running our booth at the Cortez Farmer's Market, and is often behind the bakery counter helping customers discover new treats.
We're lucky to have a brilliant team working with us behind the scenes and behind the counter of the bakery. We literally couldn't do it without their dedication to good food and their willingness to get up at weird hours of the night in order to open the doors every day!
The Pie Maker is located at 17 N. Harrison Street in Cortez, Colorado. On Valentine's Day 2015 we opened our doors for the very first time to welcome new and old friends into our bakery. After a winter's worth of planning, remodeling, painting, and kitchen building we have developed a space that is cheerful and welcoming to folks dining in or grabbing to go. You will find comfortable seating, bright decor, and whimsical local art for sale. And of course you will be enveloped by the lovely aroma of freshly brewed local coffee and our homemade pastries baking throughout the morning.
When we originally started The Pie Maker Bakery in 2012 we were generously housed inside of The Farm Bistro in Cortez, Colorado, and customers enjoyed finding our desserts and specialty cookies for many years at this fantastic farm-to-table restaurant. Today you can find our savory pies and other items on the menu at WildEdge Brewing Collective at 111 North Market St in Cortez.
The Pie Maker can also be found at local farmer's markets. Every Friday, from June through early October, we travel to the Telluride Farmer's Market to sell our nitro cold brew coffee and sweet and savory pies from 10:30 to 4:00. And we are at the Cortez Farmer's Market every Saturday from 7:30AM-11AM, June through October. At market you will enjoy plenty of fresh air, live music, and local farmer's bounty -- plus you can get a tasty pastry to start your weekend out right!
The Pie Maker specializes in handmade, artisan baked goods created from our own line of lovingly developed recipes. Our pie selection includes savory hand-pies, quiche, decadent cream pies, and traditional style fruit or custard pies showcasing flaky all-butter crusts. Everyday the shop has pie by the slice or full pies available by special ordering. We offer rustic breakfast pastries warm from the oven, tasty cookies and elegant chilled desserts.
We make traditional, NY style bagels from scratch that'll knock your socks off and have you wondering what coast you're on. For breakfast and lunch you can get outstanding, hot bagel sandwiches made to order with our own variety of whipped cream cheese spreads, freshly chopped vegetables, and sustainably raised meats. We also have house salads to pair with savory options, featuring our homemade Orange-Basil Vinaigrette.
We serve locally roasted Fahrenheit Coffee. Other beverages include hot teas, cafe au lait, and refreshing iced tea or cold brew coffee. We are the first shop on the Colorado Western Slope with Nitro Cold Brew coffee on tap.
We start with the deliciousness of cold brew coffee. Fresh, locally roasted coffee beans are infused in cool water for over 16 hours. Why? Cold brew lacks the acidity and bitterness of traditional hot brewed coffee. It has an almost natural sweetness and a complex flavor profile that is magnified when served refreshingly ice cold.
Our Nitro Cold Brew is served from a keg pressurized with nitrogen gas. We pour the brew through a stout faucet, resulting in a creamy drink with a frothy head reminiscent of a Guinness beer. We are proud to introduce Nitro Cold Brew to the Western Slope of Colorado.
As gluten free customer requests have increased, we've expanded our naturally flourless options to include treats baked with a superfine rice flour blend that we never add texturizing gums into. This is because these typically utilized gums are difficult to digest and can cause gastrointestinal problems that are similar to the very ones seen in gluten intolerance. We use only whole, unprocessed ingredients that are fresh and easy on your tummy! We hope you enjoy... frequently!
