The Pie Maker offers a soul-satisfying variety of hand-crafted baked goods to pair with your breakfast, lunch, or dinner. We are a small batch bakery, which means that we bake everything fresh daily. We are thrilled to see our pastry cases empty at the end of each day, because we always bake anew the following morning. Please call us a day or two ahead of time to SPECIAL ORDER items such as whole pies, bags of bagels, and any large quantity items you may want to bring home.

Our Ingredients

cortez bakeryThe Pie Maker bakes with only organic butter and natural ingredients, never using preservatives or flavor additives in any of our baked goods. We purchase cage free eggs, fruits and veggies that are often organic and locally sourced whenever we can find them. We use organic bread flour in our bagels and pate a choux. We also use locally milled, unbleached Cortez Milling 'Red Rose' flour in our cookies, cakes, and breakfast pastries. We have a dedicated blend of superfine rice flours that we use to create our fabulously tender GLUTEN FREE treats. We only brew the finest locally roasted coffee. The meat products we cook with have been raised and butchered sustainably and humanely. We think that great ingredients make great baked goods!

Cinnamon Rolls

Rich brioche stuffed with cinnamon and brown sugar, then glazed with a deliciously sinful icing. You'll be happy you called this breakfast.

Fruit & Nut Granola

Sweetened with apple sauce, raw Colorado honey, and a touch of brown sugar, our homemade granola has great flavor and a satisfying crunch. You'll find toasted walnuts and almonds plus dried cranberries in every bowl you pour!

ORGANIC BAGELS

cortez bakery Handmade artisan bagels created from scratch in the traditional New York style of boiling before baking. Our bagels are chewy on the outside with a soft but firm inner crumb.

Come to the Cortez Farmer's Market every Saturday morning for The Pie Maker's hot bagel sandwich stand. We will serve whipped cream cheese spreads, sweet jam and chocolate spreads, or smoked lox salmon and fresh vegetables on gourmet bagel sandwiches. See you bright and early every Saturday!

Savory Hand Pies

This thickly sliced, New York style cheesecake is luxurious and smooth. We top our cheesecake with white chocolate ganache and swirl in fresh fruit puree for a sweet-tart combination that is utterly addictive.
